The Pipeline: What's Opening Next
RAR's lead report published 812 new pre-opening restaurant leads between October 27 and November 3. These five independents stood out:
- La Casa de Mamá — Portland, OR (December 2026) This family-run, 100% vegan Mexican bakery has spent more than five years selling pan dulce, conchas, empanadas and tres leches cake at Portland pop-ups, farmers markets and community events. The opening is its first storefront, and local reports say it is believed to be the first vegan Mexican bakery in the area to open a brick-and-mortar shop. It plans to start small, then add seating, regular public hours and savory items such as vegan tamales and pozole. Expect demand for plant-based baking ingredients, flour and sugar, packaging, display cases, ovens and mixers, and POS.
- Sushi Maruyama — Sunnyvale, CA (December 2026) This Japanese restaurant serves sushi, sashimi, appetizers and cooked dishes at its San Mateo location, and the Sunnyvale opening brings the concept to a new city. The San Mateo menu leans on bluefin tuna, salmon, yellowtail and scallops, plus miso-marinated black cod and Japanese-style fried chicken. Expect demand for fresh and frozen seafood, rice, beer and sake, sushi and kitchen equipment, tabletop, and POS.
- Mi Vecino — Austin, TX (January 2027) This new coastal Mexican seafood restaurant from a local hospitality group is taking over the space of a South Austin seafood restaurant that closed in October after five years. The menu centers on ceviches, tacos and fajitas, with some live-fire cooking, house-made tortillas and salsas, and a margarita-focused bar. It is being pitched as a family-friendly neighborhood restaurant. Expect demand for fresh seafood, masa and produce, tequila and bar supplies, live-fire equipment and tableware.
- Som Dee Signature — Denver, CO (March 2027) This larger, more elaborate spinoff of Som Dee Thai Kitchen comes from an owner who also runs another Thai restaurant in Edgewater. Local reports describe a main dining room, a lower-level space for multi-course meals and a bar, with a menu drawing on khao soi, pad Thai and curries. Expect demand for Thai pantry ingredients and produce, proteins, wok and kitchen equipment, bar and beverage supplies, tableware, furniture and POS.
- Asado Gaucho — San Diego, CA (April 2027) This locally owned Argentine barbecue concept is built around slow-grilled meats over open flame, with a signature chimichurri and classic Argentine dishes. It is planned for downtown San Diego with an April 2027 target. Expect demand for beef and other proteins, wood or charcoal, grills and live-fire equipment, wine and spirits, produce and tableware.
Sales Playbook: Selling to Restaurants
The person who answers the restaurant phone is a filter, not a wall, so give them a reason to put you through. According to sales trainer John Barrows of JB Sales, gatekeepers respond to a clear, specific reason for your call that they can repeat to the boss, or to a sincere "maybe you can help me" that asks how to get on the decision-maker's calendar, and they spot faked familiarity or vague pitches quickly. "Gates are meant to open," Barrows says. In a restaurant the gate is usually a host or manager covering a busy floor, so call between the lunch and dinner rushes, keep it under 20 seconds, name who you want (owner, chef or GM) and what you can do for them, and ask when the best time to call back is. Never pose as a guest or a friend of the owner. (JB Sales)
Industry Trends
DoorDash agreed to buy Instacart for about $17 billion, joining restaurant delivery and grocery delivery under one roof. The deal values Instacart at $65 a share, a 26% premium to its Oct. 22 close, with at least 75% paid in cash. It isn't expected to close until the end of 2027 or the first half of 2028, and the two companies will run separately until then. DoorDash plans to keep the Instacart brand and app, and Instacart's retail media business brought in $331 million in the third quarter, about 30% of its revenue. (Restaurant Dive)

The Cheesecake Factory posted a 15.2% jump in third-quarter comparable sales at its namesake restaurants, a standout result. Total revenue reached $1.033 billion, up about 13.9%, while food and beverage costs eased to 21.2% of revenue from 21.8% and labor to 34.8% from 35.6%. Labor & Costs
Sweetgreen is betting on pay to keep its restaurant managers, with a new plan that could push top earners past $200,000. Its Head Coach Incentive Plan rewards tenure, restaurant size and performance through higher base salaries, sales-based bonuses and company equity, and it takes effect in the first quarter of fiscal 2027. A separate program pays a $10,000 bonus for each employee a manager develops into a head coach. "We all are competing for the best talent," COO Jason Cochran said. The chain operates 289 restaurants. Technology & Innovation
The FTC, joined by California officials and seven state attorneys general, sued restaurant software and payments company Toast over what it calls hidden fees and hard-to-cancel contracts. The complaint alleges unauthorized fees and add-on services, unmet "24/7/365" support promises, and cancellation terms that include a $150-per-remaining-month early termination fee and loan balances that accelerate when a customer leaves. The allegations have not been proven in court. "Small businesses are the backbone of communities across the country," said Christopher Mufarrige, director of the FTC's Bureau of Consumer Protection.
